-1.5-2 tbsps of maple syrup
-1.5 tbsps honey

*All of these ingredients were carefully selected for being anti-inflammation or rich in antioxidants as our mission is to Fix America’s Inflammation Problem.
Instructions
- Combine all the dry ingredients (Quinoa flour, baking soda, matcha) into a large bowl. Whisk until thoroughly mixed.
- Next, add the milk, vanilla extract, honey and maple syrup. Do not stir at this point.
- If using a fresh avocado, cut the avocado and put it into a smaller bowl that can be used to mash the avocado. Use a spoon, mortar and pestle or a molcajete to create the mashed avocado. Once mashed, add three tablespoons to the big mixing bowl.
- Slowly, use the whisk to mix the ingredients, ensuring all dry and wet foods have mixed. You want the batter to be think in consistency and not runny. Avoid over-mixing, as that will create thin pancakes.
- Let the batter sit and turn your griddle/ cook top on. Spray with cooking oil or coat with a thin layer of oil. Ensure the entire area that the pancakes will be cooked is coated.
- Using a cup, scoop the batter from the bowl and pour it onto the cooking area. depending on the size, you will have the gauge where to pour the batter. You want to pour the batter so it is about 4-5″ in diameter.
- Wait until you see the batter create air bubbles that are beginning to pop near the surface before you flip the pancakes to cook the other side. This will create a fluffy, tasty pancake!
Optional
